We’ve been learning the magic of cacao over the last 4 years, met outstanding experts and amazing communities who cultivate so diligently the cacao that goes into creating the chocolate that we love.
Each community has a story, in some instances the cacao is indigenous, and they work hard to cultivate the land of their ancestors to maintain the integrity of the heirloom cacao passed down through generations. In other parts of the world cacao is an imported crop, introduced to provide a sustainable agricultural crop that can maintain the rainforest, protect indigenous wildlife, provide women with empowering economic activity and maintain peace.
Each cacao has a flavour, influenced by the environment in which it is cultivated, handled with care and attention it will create a unique chocolate that represents that.
Last year I visited Colombia, I had a unique opportunity to learn from cacao farmers how it is grown and how the purchase of cacao can bring peace and make a real impact to these communities.
York Cocoa Works will allow us to work more closely with these communities, with their cacao and to share their stories and to celebrate their role in the chocolate making process.
We will be able to work with and process up to 50 tons of cacao each year from tracable and sustainable sources, all with their own distinct and identifiable flavour profile. We're inviting our colleagues from across the industry to join us and make your own chocolate, we will be able to work with small batches to a scalable manufacturing process, crafting chocolate that will be designed by you, made by us and created together.
