Our chocolate making process is inspired by tradition, quality and innovation, we have learnt from classic texts, old recipe books and industry experts we are fortunate to have on our doorstep to create our chocolate.
We started our process 3 years ago with a classic stone grinding machine. We love the simplicity of the process, but we found prohibitive inefficiencies in scaling up this batch process to meet our chocolate requirements. We've been working with the teams from Sollich, Royal Duyvis Weiner and FBM to plan our production process and are excited to be working with classic, re-designed longtitudinal conch to develop our chocolate flavour.
Our vision is to create a visually informative chocolate making process that has the flexibility and quality of small batch scale production with the efficiencies and scale of a continual process system. We want to make chocolate transparently for the industry and for our consumers. We want to create a production space where growers, producers and customers can share and learn from each other to create better chocolate.
